6 Years ago Chef Dominic built up the courage to leave his job as Head Sushi Chef to pursue his dream of running a fish taco shack. He used his creativity and resources to open his food truck which in 2012-2103 you could find frequently at Marble Brewery Down town and La Cumbre Brewery. The focus was The beer battered fish tako which would feature the local breweries beer in the batter making the pairing that much more special. He would always please the non seafood lovers and vegetarians with a vegetable of the day option. The favorite being his diabolical creation of a beer battered avocado, meaty, crunchy, and creamy all at the same time ! Needing to express himself creatively as a chef, Dominic also featured a world inspired tako of the day. Sharing the flavors of Vietnam, Jamaica, Korea, Peru, Japan, Southern American BBQ, and Many more all incased in a warm never chewy corn tortilla! But then as all of his fans and followers will tell you, “He packed up and moved to San Diego, CA”. Like Lebron leaving Cleveland for the first time, he was gone. But Now 6 Years later he’s returned ! And Now he has a bigger kitchen, or art studio if you will, located inside Albuquerque Indoor Karting where he can be found smiling, while jamming to lowrider oldies and slanging Albuquerque’s favorite takos along with some killer California style cheese burgers and smothered fresh cut french fries! So why TaKo you ask? Honest answer is because when chef Dominic thought of the name ,he checked online and a taco shop in Pasadena, CA had already been in business with the name for two months. Shucks missed it by that much lol. But as he sat and thought he knew from his experience in japanese cuisine that Tako and taco are pronounced the same so why not? Plus it gave a little more edge and rebellion to his name and brand. But now everyone can agree that the tako is completely different from the taco. From spelling, to fillings, to flavor, to concept. The Tako stands completely on its own and continues to add to its definition every day! Come try and see the difference for yourself!
